Zucchini Recipe

So the colors of this meal don't look that appealing to me.  It needs something red, don't you think?

Thankfully it tasted pretty good.  On a scale of 1-5, I will give it a 4.  

What I liked about it:

  • It went together quickly
  • I was able to fully prepare salads while it was cooking
  • It took about 20 minutes to make this entire meal
  • It tasted pretty darn good
What I didn't like:

  • It didn't knock my socks off.
  • Chickpeas aren't my all time favorite bean unless they have been made into hummus.
This recipe is from Jill Nussinow's cookbook - The New Fast Food.  The dish is called Simple Summer Squash.  She recommends using red, yellow or orange pepper, but I already had a green pepper to use up.  When I make this again I will look forward to using a red pepper so it looks more appealing to the eyes.  Haha.
